A tropical morning does not exactly scream “pancakes”, but there is no explaining a craving, and I had one. Maybe it was the presence of Sarabeth’s restaurant just down the street from me in Key West that got my wheels turning. Lemon Ricotta Pancakes, among other things, put her on the map in NYC long before she opened a branch office in the Keys.
Breakfast at Sarabeth’s is a treat that I have enjoyed many times, but for the month of June, I had my own house in the Keys, and a nifty gas range, and plenty of fresh lemons, and time to kill, so Lemon Ricotta Pancakes made perfect sense.
Without a recipe, I decided to wing it. (Sometimes that works out - other times, I just mess up the kitchen). This time, however, was a great big home run. These just might be the best pancakes on the planet, or at least in the Keys, or maybe until you get just down the street to Sarabeth’s. Whatever the case, they were gone quicker than you can say Jimmy Buffett.
